Mini parmigiane

Hello to everyone!
I am back after a fairly long period. But between some holidays and other various commitments, I had little time to dedicate to the blog.
But here I am again to give you another delicious recipe.
It is easy and it still make me remember about summer!
A good lunch to you all!

Ciao a tutti!
Buon pranzo a tutti voi!

Cut the aubergines into round slices. Pre-heat the grill on fire.
Grill the aubergines on both sides.
Cut the tomatoes and mozzarella into slices.

Now arrange a layer of tomato and one of mozzarella on each aubergine. Season them with some olive oil, salt and pepper. Arrange the aubergine slices on each left. Season them with more olive oil.

  3. Hi! really I don't know.
My recipe was not so nice and appetizing. I suppose it was caused by much liquid quantity linked to the mozzarella. what do you think about?
Have you any suggest on it or on new recipe with aubergines?
Thank you and what pleasure to read new recipe from you!!
    Bye

    1. Hi! I think the problem was the temperature. Some ovens are different then others. try to cook them for about 5 minutes.
you can also make without put them in the oven, just grill the aubergines.
let me know if you need other helps, it's a pleasure for me.
      bye
